Happy Monday!! You know Monday's aren't always the most fun day, but I figure to make the best of it you just have to stay positive!! That was my motto today and it turned out to be a great day!
I started out my day with Jillian! Nope...not 30 Day Shred, but this:
It was a great workout, similar to the 30 Day Shred, but just some different moves. I picked up this DVD at Ross while we were in Florida for just $3.99! I'm sure it's cause it was from 2005!!!
But it got my heart rate up and all sweaty so who cares what year it’s from right?!?! ;)
I had an egg white & cheese sandwich for breakfast.
Along with a strawberry protein smoothie. In total my breakfast was 6 points.
The smoothie really held me over for the morning and I didn't eat anything till I went home for lunch!
I'm kicking myself. I took my camera out of my purse in my office and forgot to put it back in so no lunch pictures today, but it was leftovers, so you aren't missing much! I had 1 slice of leftover pizza casserole and a serving of cottage cheese for 8 points.
I could hardly wait for 5pm to come, it was a such a beautiful day outside! I came home and tackled our to-do list we thought up on the plane ride home from Florida! Still have a few things to do, but I’ve got a good start on it now!

- Register for Dam to Dam 20K for both me & Kyle – done
Supper was simple, but delicious tonight! Mac-n-cheese!!! Not the box kind though! My consisted of 2oz whole wheat pasta, 2 oz 2%Velvetta, and broccoli for a total of 6 points.
After I registered for the Dam to Dam race I couldn’t just sit inside any longer, so I went out for a run! It was a slow, but good run. I got in a little over 2 miles in 21 minutes. It was a pretty windy evening so I think that had some impact on the run. Overall though it felt great and I’m glad I squeezed it in!
When I got home I re-fueled with 1 c honeydew for 1 point. This melon has been super sweet…good stuff!
This week is short for me. My office is closed on Friday for “Good Friday” and I pretty excited that I only have 3 work days left!! I’m pumped to have a great week and hopefully see a loss on the scale!!

I'm always so impressed with all your meal preparation...aside from the mental focus on fitness, eating at home is such a great success factor. I'm the cook in the family...does Kyle cook anything for you?
I love your meals. They always look so good. I tried the one you put up yesterday -- the pizza casserole tonight -- I modified it a little bit with some veggies...but it was delish!
All of today's food looks fantastic. The honeydew makes me wish for summer...soon!
You've probably already went into detail about this, but what exactly goes in your protein shake? I've been thinking about adding one into my daily regime and am looking for ideas. Thanks!!
I love seeing your food posts. Such great, simple, yet yummy ideas that mostly look quick to put together. I've definitely copied some of your meals.
