Creamy Baked Chicken
4 points/servings, makes 8 servings
  • 4 6-oz chicken breasts
  • 1 can 98% fat free cream of chicken
  • 1/4 cup water
  • 2 cups Stove Top stuffing mix
  • 1 c. fat free chicken broth
  • 4 oz. low fat swiss cheese
Cut chicken breasts in half so you have 8. Place in 9x13 pan and preheat oven to 350 degrees. Mix soup and water. Put Swiss cheese on chicken breasts. Pour soup over chicken. Sprinkle crushed stuffing mix over chicken. Drizzle chicken broth over. Bake for about 45 minutes or until done. Check it at 40 minutes

Creamy Potato Ham Bake
4 points/serving, makes 4 servings
  • 16 oz raw shredded potatoes or thawed hash browns (I use Mr. Dee's)
  • 1 full cup 97% fat-free lean ham
  • 1 can green beans
  • 1/2 tsp dried parsley flakes
  • 1/4 tsp black pepper
  • 1 can Healthy Request Cream of Celery soup
  • 3 oz Velveeta Lite, cut up in small pieces
Mix all ingredients together thoroughly. Place mixture in sprayed 8X8 baking dish and bake at 350 degrees for 25-30 minutes.

Deep Dish Pizza Casserole
6 points/serving, makes 6 servings
  • 1 lb ground beef or turkey
  • 1 15 oz can tomato sauce(you may chunky if you prefer)
  • Cooking spray
  • 1 10oz can refrigerated pizza crust
  • 1 1/2 c 2% shredded mozzarella cheese 
  • Add veggies to your liking
Brown meat. Drain if necessary and return to skillet. Add tomato sauce and cook until heated. While meat cooks coat 9 X 13 baking dish with cooking spray. Unroll pizza crust dough and press into bottom and halfway up side of baking dish. Top with meat mixture. Bake uncovered at 425 degrees for 12 minutes. Top with cheese and bake for 5 additional minutes or until crust is browned and cheese melts. Cool 5 minutes before serving. 

 Fiesta Chicken & Rice Bake
6 points/serving, makes 5 servings
  • 1/2 tsp paprika
  • 1 can 98% ff cream of chicken soup
  • 1 c salsa
  • 1/2 c water
  • 1 can whole kernel white shoe peg corn
  • 3/4 c uncooked minute brown rice
  • 5 boneless chicken breasts
  • 1/2 c 2% shredded cheddar
Mix soup, salsa, water, corn, and rice in baking dish. Top with chicken and sprinkle with paprika and cheese. Bake @ 375 for 45 minutes.

Roasted Veggies
Points vary based vegetable
  • Vegetables of choice (I like potatoes, carrots, sweet potatoes, green beans, etc!)
  • Olive Oil 
  • Seasoning of choice (I like to use salt, pepper, garlic powder, onion powder, seasoned salt)
Preheat oven to 425 degrees. Wash & cut vegetables into small pieces. For one serving I use 1 t of olive oil and then seasoning. Spray cooking sheet. Bake for 30-35 minutes, checking & stirring every 10 minutes or so.
