Snack Attack

Tuesday in Iowa = Thunderstorm Day...It's been raining off and on all day! I do recall getting woke up a few times last night to thunder as well! But unlike when I was a kid, I was able to go right back to sleep!

For some reason I had a hankering for eggs & toast this morning. So I made my egg over easy with a toasted thin bun for 3 points! I love dipping toast in the yoke!! DSC06885

I stopped at the grocery store to pick up a few things and one of those Reeses eggs jumped into my basket and yes I gave into temptation and bought the silly 25 cent “super after Easter sale” candy at 7:30am. Points = 4 YIKES!! That's more than my breakfast and WAY less filling.

So this is where my snacky-ness started. Once at work I dove right into my stash of snacks and had not 1, but 2 of these yummy little guys. But to my surprise (due to the high fiber content) they were only 1 point per package...thank goodness! DSC06891

I also had 2 homemade *small* peanut butter cookies for an estimate of 3 points each (6 total).

Ok Darci...you MUST stop all this snacking!! Instead I opted for my healthy snack and mixed up 1 1/2 c strawberries, 1/4c grape nuts, and vanilla yogurt for 3 points. DSC06886

I kept things light for lunch due to all my morning snacks! I had 1 c honeydew melon, 1 c fresh pineapple, and 1/2c cottage cheese for 4 pointsDSC06887

After work I hurried home and made supper for 2 families! We were asked to provide a meal for a family at church who just had a baby! So we got it all boxed up and delivered! I also got my baby fix in…he was SO tiny & SUPER cute!!DSC06888

I made them the same thing we had, creamy baked chicken & green bean casserole. My servings totaled 9 points. DSC06889 DSC06890

Creamy Baked Chicken (4 pts/breast)

  • 4 6-oz chicken breasts
  • 1 can 98% fat free cream of chicken
  • 1/4 cup water
  • 2 cups Stove Top stuffing mix
  • 1 c. fat free chicken broth
  • 4 oz. low fat (or fat free) swiss cheese

Cut chicken breasts in half so you have 8. Place in 9x13 pan and preheat oven to 350 degrees. Mix soup and water. Put Swiss cheese on chicken breasts. Pour soup over chicken. Sprinkle crushed stuffing mix over chicken. Drizzle chicken broth over. Bake for about 45 minutes or until done. Recipe courtesy of Kelly!

I’ve been a busy little bee tonight, made supper, cleaned up after supper, 2 loads of laundry, filed in our office, organized storage area, picked out clothes for the rest of the week! I’m ready to chill!

I need to get back to tracking my weekly allowance points & activity points so I’m adding it to my “stats” for each day for my use more than anything! I think this will help me reach my goal weight and keep me on track.

I also had this kind of day yesterday-I wanted to eat everything not nailed down! I think since I had the flu and have been starved for a few days :o) Let's get back on track!

Dang easter sales (or any after holiday sales). There hasn't been much available around here for this holiday, which makes me very happy. I did pick up a few things yesterday for my niece and nephew, but I can give those away.

Even with a little snack attack you kept your points fairly low. Looks like you conquered the monster.

Hi,

For the last week and a half I've had snack attacks too! I can't seem to control myself! I love the 100 calories strawberry cream cheese things! oh my! and to dip my toast in yolk yummmm!!

I know you follow WW I don't though :( maybe i should. I only do portion control and workout, but I love fruit like you with vanilla yogurt I eat the 45 calorie ones from Dannon light, called carb and sugar control, I've never tried grape nuts, it looks yummy like that. On my list to try! I've hit a slump this past week and a half I'm reading your blog daily and getting inspired! Thank you!
