Iowa…March…80 degrees…I’ll take it!

Is this week flying by or what?!?! Wait or should I say March? This week is almost over and tomorrow is the beginning of April! Wow!

I started out my last day of March with a pretty pink smoothie!

In the mix:

• 1 1/2c frozen strawberries
• a few blueberries
• small banana
• strawberry yogurt
• 1/2 scoop protein powder

Total of 4 points!

I also scrambled 3 egg whites with a slice of ff swiss cheese for 2  points. This was the first time using swiss cheese in my eggs and I loved it!

Today was an amazing day in Iowa…the temperatures were tipping out around 80 degrees!! Unheard of for March in Iowa! I didn’t even have to put away my sandals, skirts, & shorts from my Florida trip! ;)

Lunch today was a broccoli & cheese baked potato for 3 points. I think this is one of my favorite simple, but filling lunches!

Since it was so wonderfully nice out I thought I needed some ice cream so I had one of these little guys for 2 points!! Chocolate fudge brownie…doesn’t get much better! :)

Supper tonight was Fiesta Chicken & Rice Bake. My serving was 6 points. Click on the link to get the recipe! It’s some good stuff…trust me!

Today was a rest day for me for exercise, but don’t worry I wasn’t sitting around! Nope I was busy getting sticky with these brightly colored bowls of frosting!

I got the baking itch earlier in the week and decided I wanted to make some festive cookies for work on Thursday! I’m sure my staff will enjoy them! ;)

I did have a few blt’s while baking & frosting. I’m going to estimate about 4 points. I’m sure it wasn’t that high, but I just want to be safe!

Well friends, this baking blogger is ready to hit the hay! Tomorrow is my “Friday”, hooray!!
