Day 112 (Monday 2/23)

So as you read in an earlier post (I hope anyway!) DH drug my rear end outta bed and got me to the gym! It was hard and like I said in my Sunday post...I'm sorry honey for being such a "bear"! I only had time for a 20 minute run of which I only walked 2 minutes of! So even though it wasn't a long workout it was the longest length of time I've ran in quite a few weeks.

My breakfast was "same ole, same ole oatmeal"!! Oh yeah, and of course an apple to for 3 points.

My mid morning snack was WW yogurt with 1/4 c grape nuts for 2 points. MMmmm!!
And I had another apple before lunch for 1 point.
On my lunch I decided to do a little something special for my special someone...DH! The headlight on his car went out on Saturday night and so he was concerned about it (getting a ticket!) and we didn't have time to stop at the parts store yesterday to get one since we were in Iowa City, so I thought I would do it for him on my lunch break so he could come right home after work! So I got his replacement headlight and left him a nice little "love note" with the headlight in his car!

Then I headed to the house to let the pup out (which I forgot to take pics of her new haircut....I'll do that this week...promise!!) and make some lunch. Oh and supper too! While my veggies were cooking in the microwave I got supper together! It's nice to make the evenings a little less hectic by having dinner ready to just pop in the oven when I get home from work! So for lunch I had broccoli & cauliflower w/ff cheese and a ham, turkey, & cheese wrap for 4 points. Very filling!

Mid afternoon I snacked on a caramel fiber one bar for 2 points.

Oh and later I did have a diet sunkist...0 points!! I think that is my favorite pop!! Yes I call it "pop"...not "soda"!! :)

Since I got supper ready over my lunch break I got right to work on some wedding invitations I need to get made this week, while supper was baking in the oven. I actually got a lot done, I am hoping to have the invites done and mailed to my customer by this weekend! It would be a record if I did...that's for sure!


I made Creamy Potato Ham Bake for supper. It was a recipe from my ww leader when I was in ww back in 2005. She was so good about typing up recipes and sharing with everyone! It is an easy, yummy recipe the whole family will enjoy! I had a little more than a serving for 5 points.


Creamy Potato Ham Bake
4 points/serving, makes 4 servings
  • 16 oz raw shredded potatoes or thawed hash browns (I use Mr. Dee's)
  • 1 full cup 97% fat-free lean ham
  • 1 can green beans
  • 1/2 tsp dried parsley flakes
  • 1/4 tsp black pepper
  • 1 can Healthy Request Cream of Celery soup
  • 3 oz Velveeta Lite, cut up in small pieces
Mix all ingredients together thoroughly. Place mixture in sprayed 8X8 baking dish and bake at 350 degrees for 25-30 minutes.

After supper I got back to work on the invites. DH was so nice to peel me an orange that I snacked on to satisfy my sweet tooth! (1 point)

Ok so I think there were some problems going on with my blog over the past 2-3 days. You may have gotten an error about Internet Explorer cannot open this page, operation aborted....yep not sure what I did, but I think it's fixed now! So I hope everything is running smoothly now for your reading pleasure! *Sigh*

PS I do welcome Cyclone fans/Iowa State Alum to my blog...but just know that I do NOT cheer for the clones!!! :) ha ha I'm a "black & gold" girl!!!

A "personal best" on the running definitely equals (or surpasses) a longer and slower workout! Way to go!

Your dinner looks really good! Are the caramel Fiber One bars new? I don't think I've seen them, but they sound good!

I made the Ham and Potato Bake tonight and it was awesome! my husband couldn't get enough. Thanks for posting the recipe. :)
